One of my Heroes....

So I have this brother that is one of the most incredible people ever. Here's a picture of him and his wonderful wife Diane. We were lucky enough to go up to Burley to visit them and their family again today. We always love to go up there, but today was an extra special visit. Dan was called to be the bishop in his ward. A better man couldn't have been chosen. He's such a inspiration to so many people....I'm sure many more than he's ever realized or imagined. I know he's been someone that I've always been able to look up to. He's always there when you need someone, and willing to help in anyway he can. He's the type of person that just lights up the room when they walk in. So....I'm dedicating this post to him. I hope he knows how lucky I feel to be blessed to have him as a brother. He holds a special place in my heart, and I know my kids would say the same. They think he's great!!!
Congratulations Dan on your wonderful new calling, and may you be blessed with all the guidance you may need to fulfill your duties. We love you!!!!

My baby's growing up....

I can't believe it, but Ryker's almost 3 (I still have 2 days with my two year old baby!!!). We had his party on Saturday, and that's all he's been able to talk about for days. He was so excited for everyone to come to his party. He had tons of fun, and of course got lots of great gifts from everyone. We just kept it simple for this party, and had everyone over to the house. He's really into Curious George, so that's who he decided to have on his cake. I keep telling him that he can't turn 3 until he starts to potty on the big boy potty. It's looking like his birthday will come and go, and he still has NO interest in potty training. I CAN'T wait until he decides it's time. I'm sick of the diaper stage!!!!! Anyway.....here's a few pics from his party.

Such a slacker...

Okay...I've been such a slacker lately at blogging. I just can't seem to get enough stuff done in the day, and I've been so far behind with everything else, that I just haven't had time to post anything. Sad thing is, we really haven't been doing anything worth writing about. I mentioned that my camera was broke, so I didn't even have any fun pics to put on here. We did get a new camera, and I'm hoping to play with it a little today and figure out all the bells and whistles. We're having Ryker's b-day party tonight, so I'm sure I'll be posting pics from that a little later. Anyway....my sister-in-law Andrea had an idea to add recipe ideas to our blogs, to help everyone out with dinner....so here's mine for this week. I'm going to try and post one once a week or so (if I have that many recipes). This is a quick and easy recipe that I can actually get my kids to eat!!!

Beef Taco Bake
From: Campbell's Kitchen
Prep: 10 minutes

Bake: 30 minutes
Serves: 4
Ingredients:
1 lb. ground beef 1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup (Regular or 25% Less Sodium)

1 cup Pace® Thick & Chunky Salsa OR Pace® Picante Sauce

1/2 cup milk

6 (6") corn tortillas, cut into 1" pieces OR 8 flour tortillas (8-inch), cut into 1" pieces

1 cup shredded Cheddar cheese (4 oz.)

Directions:
COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.
ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.
BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.

Family Photo's

So last year we spent WAY too much money getting our family photo's taken. So this year we asked Chad's step-dad Ray if he wouldn't mind taking them for us. He did a wonderful job, and we had a great time. The only thing that sucked was the rocks were SO cold. My butt was freezing by the time we left. Ryker fell asleep on the way there, so he wasn't very cooperative at the beginning. He got much better as the time went on. Ray did a great job, and took so many, I had a hard time choosing. Here's a few of my favorites.
